Doses required for 6 people: 150 g of aubergines, 150 g of courgettes, 150 g of green beans, a pepper, 80 g of soaked dried mushrooms, 6 slices of homemade bread, 3 tomatoes, a shallot, a clove of garlic, flour , basil, extra virgin fruity olive oil “intense” Logoluso, salt, pepper.
Peel the aubergines and slice them horizontally, add salt and leave to stand for about half an hour to remove the excess liquids. Now take the slices, pass them in salted flour and fry them in Extra Virgin Olive Oil. After frying them, place them on absorbent paper to remove excess grease. Clean and wash the rest of the vegetables and cut them into pieces. Chop the garlic and shallots and fry them in a large non-stick pan with 4 tablespoons of Extra Virgin Olive Oil. Take the green beans, the pepper and add them, wait a few minutes and do the same with the courgettes, tomatoes and chopped dried mushrooms. Add salt and pepper and cook for 15 minutes. Almost at the end of cooking, add the aubergines, a few leaves of basil and mix well. Spread the vegetables on the toasted bread slices and serve.
