Doses required for four people: 2 courgettes, 1 onion, 2 peeled tomatoes, salt, pepper, orIgan, 6 eggs, 3 tablespoons of grated cheese, extra-virgin fruity olive oil “delicate” Logoluso.
Pop the courgettes and cut into small pieces.
Cut an onion thinly and brown it with a little Extra Virgin Olive Oil; as soon as it starts to color, add the courgettes, a little water and two peeled and crushed tomatoes, salt and pepper. Cover and cook for about 20 minutes. Before removing from the fire, season with a pinch of origan. Meanwhile, beat the eggs making them foamy, add the courgettes and three tablespoons of grated cheese. Mix well and pour into the pan with hot extra-virgin olive oil. Brown the omelette on one side, turn it over and cook it on the other side. Serve immediately.
