Doses required for four people: 6 tomatoes, 3 cucumbers, 2 mozzarella, 100 gr. of black olives, 1 tablespoon of capers, 1/2 smoked provola, 5 anchovies, 1 lettuce, extra virgin fruity olive oil “delicate” Logoluso, salt, pepper, 1 lemon.
Cut the ripe but firm tomatoes and cucumbers into wedges. Cut the two mozzarelle into small pieces , remove the kernels from the olives and add them to the tomatoes and the mozzarella. Carefully clean the anchovies by removing the bones and cutting them into small pieces.
Peel half smoked provola and cut into chunks, add a tablespoon of capers, wash a lettuce and cut into thin strips and add them to the other ingredients.
Season with salt, pepper, Extra Virgin Olive Oil and lemon juice.
