Cultivated throughout the north Bari area, it is a quality with a long fruit, with a strong green skin, with gold reflections, which gives the typical oil colour.
The extra virgin is characterized by an intense fruity and persistent tingling that leave an almond aftertaste, with hints of grass and artichoke.
The very high concentration of polyphenols, of which it boasts, gives beneficial effects on people, while the low level of peroxides guarantees long life to the oil.
This is the “cultivar” typical of the Bari valley and perhaps also one of the most renowned in the world.
The fruits are small and ripen to a purple colour.
From this variety is born a gold yellow oil, characterized by a fruity aroma of almond, a sweet taste, an aftertaste of almond and light tomato and the slight tingle.
Very low acidity, less than 0.3% makes it easily digestible.
