Doses required for four people: 250 gr. of pennette, 8 tomatoes for sauce, 100 g of black olives, 1/2 glass of extra-virgin olive oil “delicate” Logoluso, 1 clove of garlic, salt, pepper, grated cheese.
Dip the tomatoes in boiling water and peel them, without depriving them of seeds, cut them into four parts. In a large pan heat the Extra Virgin Olive Oil, add a clove of garlic, tomatoes and a lot of origan, salt and pepper to your taste.
Boil the water in a large saucepan and as soon as it has reached the boil salt it and add the pennette that should cook about a quarter of an hour. Drain and pour into the pan of the sauce making them flavor. Serve immediately accompanying with black pepper to grind on the table and a lot of grated cheese. It is a very quick sauce to prepare and very tasty. It should however be prepared with fresh tomatoes that give it a particularly strong taste.
